  • 1 pound wheat flour
  • 1 tablespoon dehydrated yeast
  • 1 cup of water (250 ml)
  • 1 tablespoon olive oil
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • for the sauce:

  • 1 white onion
  • 3 cloves garlic
  • A few basil leaves
  • 1/2 cup water (125 ml)
  • 3 tablespoons white vinegar
  • 3 tablespoons tomato sauce
  • Sugar
  • Salt and pepper to taste


First, mix the ingredients in a container to prepare the dough (flour, oil, salt, pepper), keeping in mind that the yeast must be hydrated in a cup of warm water together with the sugar. Once this is done, mix well until obtaining a homogeneous mass and let it rest for 20 minutes.

Next we prepare the sauce, sautéing the ingredients in a frying pan with a little oil; the onion cut into julienne strips (or feathers), the sliced tomato, the sliced garlic and the basil leaves without the stem. After the ingredients are browned, we process them, either in a blender or a food processor, add the water, and sift the resulting mixture. We take this mixture back to the pan, or to a pot, add the vinegar and tomato sauce, taking into account the flavor of the sauce, if it is too acid we can add a little sugar. At the end, we rectify the flavor, checking the salt and pepper.

Now, we must roast the paprika and the eggplant, putting them on a grill over low heat. This, in order to burn and remove the skin of both vegetables, to use them later in our pizza. Separately, we sauté the zucchini and courgette, which have been cut into slices, in a pan with a little oil. When they are well browned, take a container and add the zucchini, the zucchini, the aubergine cut into cubes and the julienned paprika. right there we will add the rest of the ingredients to marinate, which are sesame oil, paprika, vinegar, olive oil, sugar and finely chopped garlic clove, rectifying salt and pepper.

Finally, we take our dough and place it on the utensil that we will use for baking (tin, refractory), greasing it with oil or butter so that our pizza does not stick. We must chop the pizza with a fork, so that it is well cooked inside, and spread the previously prepared sauce on it, in addition to the ingredients that we already had marinating. Add the basil leaves on top (if you want them baked, otherwise add them fresh after they come out of the oven). We take it to the oven for 15 or 20 minutes at a temperature of 220 degrees Celsius, and that’s it.
