Zucchini with rice and pesto


  • 200 g cooked white rice
  • 1 courgette (zucchini) cut into thin slices
  • < li itemprop="ingredients">1/4 cup pesto (oil, walnuts and parsley or basil, salt and pepper)

  • Tomato and chives (garnish)


Cook the rice and let it cool slightly.

Make the pesto by mixing all the ingredients with a mixer or food processor.

Mix the pesto with the rice.

Sauté the zucchini in a little oil until tender.

Place a layer of zucchini on top of the rice and then another layer of rice, followed by with a second layer of zucchini.

Garnish with tomato and chives.
