Ingredients
- 2 zucchini (zucchini)
- 1 head of broccoli
- 1 clove of garlic
- Juice of 1 lemon
- 1 tbsp extra virgin olive oil
- 1 small handful of coriander leaves
- 1 tbsp tbsp pine nuts
Preparation
- Slice the courgettes diagonally, brush with oil, grill over high heat
- If you don’t have a frying pan, you can grill the zucchini
- Simmer the broccoli until just cooked
- Use a pestle and mortar to mash the garlic, add the lemon juice, oil and salt
- Finely chop the coriander
- Roast the pine nuts in a dry pan over medium heat
- Toss the broccoli, zucchini and dressing well
