Very good days!

Today we start the week with a new recipe. And how could it be otherwise, I bring you one of my favorite recipes: a good plate of pasta.

Ingredients

200 grams of wholemeal spaghetti (or not)
1 can of dried tomatoes in oil
1 can of coconut milk (not brick, it must be canned)
1 cup of fine or medium-sized textured soybeans
1 onion
5 mushrooms
2 garlic cloves
Oregano
Salt
Olive oil< /p>

Step by step

  1. The first thing we will do is put the soybeans to hydrate so that they are ready. So we put the textured soy in the cup and cover it with water. Let it rest at room temperature.
  2. In a pot with plenty of water, cook the 200 grams of pasta. When they are al dente (about 8 min. more or less), remove them from the water and set aside.
  3. On the other hand, peel and chop the two garlic cloves and add them to the frying pan.
  4. Open the jar of dried tomatoes in oil and pour a long stream of tomato oil into the frying pan.
  5. Turn on medium heat and let the garlic lightly toast.< /li>
  6. Meanwhile, peel and chop the onion.

  7. When the onion is golden, add the sliced mushrooms.
  8. Sauté until golden and add the soy textured, previously filtering the water in case it has not absorbed all of it.
  9. Next, we recover 6 or 7 dried tomatoes and cut them into slices. We also add the dried tomatoes to the pan.
  10. Brown until the textured soybeans take on a slightly crunchier texture.
  11. Finally, add the coconut milk and stir well, until the sauce thickens and acquires the flavor of the ingredients.

  12. Add the cooked whole-grain spaghetti to the pan and stir until the sauce is distributed all over the pasta.
  13. Add oregano, a pinch of salt and mix again.
  14. Finally, serve hot with a pinch of salt and oregano on top.
