White bean stew with brown rice


  • 250 gr. of white beans
  • 100 gr. of brown rice
  • 3 chard leaves
  • 4 cloves garlic
  • Water
  • Extra virgin olive oil
  • Salt
  • Pepper


Soak the beans in cold water the night before. put water in the pot, add the beans, a pinch of salt and a splash of oil. put the lid on and cook for 10 minutes from the moment the steam begins to come out.

Clean the chard, remove the strings and chop them. peel the potato and chop it. open the pot and add the chard and the potato, put the lid back on and cook for 5 more minutes.

Soak the rice the day before, drain the water and cook it in a saucepan with plenty of water . add a couple of cloves of garlic and a pinch of salt and cook for 20 minutes.

Chop the other 2 cloves of garlic into fine slices and brown them in a pan with oil. Chop the onion finely and add it. when it takes color, peel and chop the tomato into cubes and add it. cook for 10 minutes until well poached. drain the rice and add it to the pan, sprinkle with a little paprika, mix and pour it over the beans. stir gently and serve.
