Ingredients

  1. Salad:
  2. 1 large romaine lettuce
  3. a large handful of watercress or arugula
  4. A handful of seedless grapes, halved
  5. 1 apple, diced
  6. 2 sticks of celery, chopped
  7. A handful of chopped walnuts
  8. 100 g Cherry tomatoes, halved
  9. Walnut seasoning:
  10. 1/2 teaspoon Dijon mustard
  11. Juice of 1/2 lemon
  12. 1 tablespoon olive oil or Linseed oil
  13. 3 tbsp yeast flakes
  14. 60 ml water
  15. 40 g cashew nuts or 1 tbsp nut butter

  17. 1/2 tsp garlic salt or Fleur de Sel
  18. Black pepper to taste

Method

  • In a Nutri Bullet or blender, combine all the ingredients for the dressing with enough water to make a thick, creamy dressing. This can be kept in the fridge for 3-4 days.
  • Put all the ingredients in a large bowl and mix well. To serve, drizzle with vinaigrette and toss well. The salad will keep for a few days in the fridge.
