Ingredients

  • 路 250 gr fresh tofu block
  • 路 2 medium carrots
  • 路 2 tbsp roasted sesame seeds
  • 路 1 or 2 tbsp soy sauce
  • 路 freshly ground black pepper ground
  • 路 nutmeg
  • 路 salt and oil
  • 路 wholemeal flour
  • taco pancakes:
  • 路 200 g flour
  • 40 gr of butter
  • 陆 teaspoon of sugar
  • 125 ml of warm water
  • 陆 teaspoon of salt
  • 陆 bag of baking powder
  • mexican sauce:
  • 路 5 tomatoes red
  • 路 1 onion
  • 路 5 chillies or chili peppers
  • 路 1 tsp cilantro
  • 路 1 lemon juice
  • 路 salt
  • 路 a pinch of garlic powder
  • cream sour:
  • 路 100 gr. tofu
  • 路 2 tbsp oil
  • 路 2 tbsp water (or tofu serum)
  • dish:
  • 路 1 can of boneless black olives, drained and cut into slices
  • < li itemprop = "ingredients"> 路 very finely chopped lettuce

  • 路 thinly sliced onion
  • 路 mexican tacos tortillas
  • 路 sour cream
  • 路 mexican sauce

Preparation

A) prepare the tortillas:

. put flour in a bowl and add baking powder, salt and sugar. mix everything well.

. add margarine cut into cubes and add it to the mixture. work it all well.

. pour water and knead to form a homogeneous dough. cover the dough with a towel and let it rest at room temperature for about two hours.

. Knead the dough again, divide it into ten equal parts and form a ball from each of the parts.

. Flour the work surface, press the dough balls a little with your hand and roll them out in the shape of a circle with a diameter of 13-15 cm.

. Heat a nonstick skillet and brown both sides of the tortilla.

. cover the tortillas with a towel and set aside.

B) Mexican sauce:

. Chop all the ingredients into small cubes.

. add the salt, coriander and garlic with the lemon juice and reserve.

C) sour cream:

. mix the ingredients with the blender until you have a smooth and creamy paste.

. add lemon juice. depending on the degree of acidity desired, add more or less juice.

D) prepare the “eyes”:

. wrap the tofu in a cloth and leave it for 30 minutes at room temperature, so that it releases as much whey as possible.

. meanwhile, chop and brown the onion, cook the peeled carrots and chop them very small.

. Mix very well in the pan the onion, the carrot and the shredded tofu with your hands, the sesame, the soy sauce and the spices, over low heat so that any remaining water evaporates.

< p>. We form meatballs the size we like and flour them before frying them in the pan with plenty of hot oil. so that when they are floured they do not fall apart, you can pour a little flour into a bowl and put the meatball inside, gently shake the bowl in circles and the meatball is covered in flour by itself.

To remove the excess of oil, put on a plate with absorbent paper.

E) Assemble the tacos:

. fill the tortillas with lettuce and onion.

. add the Mexican sauce, place two meatballs on top, a little sour cream and a slice of olive to simulate an eye.

Note: the whole process is much easier buying things already precooked or packaged (the meatballs, pancakes and even sauces) but the whole process is much more rewarding.
