Vegetarian burritos: quinoa and textured soy with paprika Easy introduction to vegetarian cooking

Very good days! Today I bring you one of the simplest and most useful recipes for when you are introducing yourself to vegetarian cooking. Vegetarian burritos are so easy and cheap to make that they were one of my first favorite dishes when I started to stop eating meat.

Cheap, easy to prepare, accessible, and allows you to discover new combinations, take advantage of ingredients you have in the fridge and gradually introduce vegetable foods that, perhaps, you did not want to eat before.

Ingredients

Bread for burritos
1 cup fine textured soybeans
1/3 cup Quinoa
Water
1 garlic< br> 1 onion
Parsley
Oregano
Hot Paprika
Sweet Paprika
Salt
Olive oil
Suggested sauces:
Easy guacamole and fast (mashed avocado + 1/3 chopped tomato + 1/2 onion + squeeze of lime + pinch of salt)

Step by step

  1. Put the textured soybeans in a large pot and add a generous amount of sweet paprika, a pinch of hot paprika, two pinches of parsley and oregano and salt.
  2. We cover halfway with water, close the pot and shake vigorously to mix the ingredients well.
  3. Let stand for 2 minutes and shake again so that the water reaches to hydrate all the soybeans. Little by little the water will be consumed.

  4. Meanwhile, bring 1 cup of water to a boil. When it comes to a boil, add the 1/3 cup of quinoa and let it cook until the water is consumed.
  5. On the other hand, mince the garlic and sauté it in a pan with olive oil.< /li>
  6. Next, add the finely chopped onion and, as soon as it is a little golden, add the soybeans.
  7. Sauté for 5 minutes until lightly toasted. Then add the quinoa, mix and turn off.

  8. Next  fill the fajitas with the sautéed. It’s time to add plenty of vegan mayonnaise or guacamole sauce (above I’ll show you how to prepare it) so that the burrito has a very juicy bite.
  9. We close them and toast them on both sides in a griddle or pan. Until golden brown and crispy.
  10. Accompany it with French fries (I baked them to save much of the oil), salad… or however you like!
