Vegetable and Bean Soup

Ingredients

  1. 2 carrots
  2. 1 onion
  3. 2 handfuls of spinach
  4. 1 can of cannellini -beans, drained
  5. 2 pints vegetable stock
  6. 200 ml boiling water
  7. A sprig of thyme
  8. 2 sticks of celery

  10. 2 garlic cloves, finely chopped
  11. 1 zucchini
  12. 1 can of chopped tomatoes
  13. 40 g Pulsin pea protein powder (or equivalent)
  14. 5 sage leaves

Preparation

  • Chop and sauté the vegetables and garlic with the sage and thyme.
  • Mix the broth, add the pea protein in add the broth and stir well before adding it to the saucepan.
  • Add the tomatoes. Cook for a few minutes.
  • Add beans and spinach.
