Or rather, good night. I think that for the first time I am writing you a recipe at 11 at night, but you know that I do not like to fail in recipes and it turns out that tomorrow we are going very early to the inauguration of the vegan rural hotel «Casa Albets» in Lleida, so here I am with the recipe.

Ingredients

1 cup and 3 tablespoons of cake flour (it has yeast incorporated).
1/2 large lemon
1 cup of soy milk
1/4 cup of Agave Syrup
2 ripe pears
1 soy yogurt (100ml)
1/4 cup of sunflower oil
A splash of olive oil
Dark chocolate
Cinnamon powder

Step by step

  1. We will start by preparing the main ingredients: the cup of cake flour (and the 3 tablespoons), the cup of soybeans, the mold and a bowl. We will also reserve 2 pears and a lemon nearby. -vegano-pear-cinnamon-0.jpg” alt=”” width=”1008″ height=”500″>
  2. To start: pour the soy yogurt, the juice of half a lemon into a bowl and the zest of it.
  3. We calculate 1/4 cup of agave syrup and pour it into the bowl. We remove.

    If a different sweetener is used, the amount will probably vary, since each sweetener has a different sweetening capacity. Other alternatives can be crushed dates, stevia, maple syrup…

  4. We calculate a cup of soy milk and 1/4 cup of sunflower, pour it into the bowl and mix.
  5. Next, we peel and cut a ripe pear and add it. This will give us flavor and sweetness without the need to add more sweeteners.
  6. Now, we are going to add the cake flour to the bowl: 1 cup and 3 tablespoons. As we have yet to crush the pear, we are going to take the opportunity to add the flour without sifting, all at once.
  7. Mix the flour a little, even if it forms lumps.
  8. With the hand mixer , we are going to grind the entire mixture until it is homogeneous, without lumps or bumps.
  9. Continue greasing the mold with a little olive oil: both the base and the sides.
  10. To prevent the cake from sticking to us, in addition to the oil we are going to spray a little flour in the mold, distributing it well and trying not to leave lumps or “balls” of flour. We reserve.
  11. We are going to add a final touch to the dough with a little bit of cinnamon powder and some chocolate chips . I simply cut 5 or 6 bars of dark chocolate with a knife.
  12. Stir well and add to the mould.
  13. Preheat the oven to 180 degrees.

  14. While the oven is heating, we are going to peel and slice a pear.
  15. We place them on top of the dough and sprinkle a little cinnamon on top.
  16. We put our vegan cake in the oven and leave it for about 40 minutes at 180 degrees. The time can vary depending on the oven, so it is best to wait until the outside looks golden, dark.
  17. When that happens, we will open the oven and insert a toothpick into the cake. When it comes out practically dry, we can remove the cake from the oven.
