Vegan tuna fondant


1 tbsp olive oil
2 red onions, sliced
1 tbsp sugar
1 packet of Future Farm Tvna
2 tbsp vegan mayonnaise < br> A small handful of chives, finely chopped (optional)
1 tsp white wine vinegar
4 slices of bread
2 tbsp vegan butter
1 jalapeno, thinly sliced
Salt and freshly ground black Pepper


1. In a medium sized skillet, heat the oil over low heat. Add the onions and cook until soft and beginning to caramelize, 10 to 15 minutes. Add the sugar and cook another 5 minutes until sticky, dark and soft. Set aside.

2. In a bowl, mix the tvna with the vegan mayo, chives, and vinegar. Season generously with pepper. Set aside.

3. Butter the bread, then place in a dry skillet until browned and toasted on one side. Flip and add a slice of cheese to each piece of bread and continue to bake until melted.

4. Assemble the tuna fudge by sandwiching the tuna mayonnaise mixture with caramelized onions and sliced jalapeños between two slices of cheese toast.
