Vegan Sweet Potato Gnocchi

For gnocchi:
  • 500 gr. of sweet potato
  • 100 gr. of flour
  • 10 gr. of tapioca flour
  • 30 ml. of oil
  • 10 gr. of salt.
For mustard and dill sauce:
  • 200 ml. of vegetable cream for cooking
  • ½ onion
  • 1 tbsp dried dill
  • 1 cp of mustard
  • Salt
  • White pepper
  1. We cook the sweet potato in the microwave or roast it in the oven. In any case, we will not boil the sweet potato, since we are not interested in the sweet potato having an excess of water.
  2. While the sweet potato is hot, we mash it with a fork until pureed, add the oil, tapioca, salt and mix.
  3. Incorporate the flour little by little while mixing with your hand. We will add the necessary flour until the dough is no longer sticky and can be easily worked with your hands. You may have a little flour left over.
  4. Make a ball with the dough and divide it into 4 portions. We will form a cylinder of about 2 cm. thick to each portion.
  5. It’s time to make the gnocchi. We cut the cylinders into portions about 2 fingers wide and with the help of a fork or a toothpick, we make the famous grooves on the top of the gnocchi.
  6. To cook these vegan gnocchi, we will boil plenty of salted water. When the water is boiling, add the gnocchi and let them cook until they float to the surface. Strain them and reserve.
  7. To prepare the mustard and dill sauce, chop the onion into small pieces and fry it in a pan over low heat. When the onion is well browned, add the vegetable cream and let it cook for a couple of minutes.
  8. Place the onion and cream in the blender jar. Add a pinch of white pepper, salt to taste, dill and mustard and blend, and the sauce is ready
  9. Serve the freshly made gnocchi with the sauce hot.
