Pretzel Bites with Mustard Sauce

Bocaditos de pretzel con salsa de mostaza

Ingredients
For pretzels:
  • 475 gr. of flour
  • 200 ml of water
  • 30 gr. of oil
  • 10 gr. of sugar
  • 5 gr. of fresh yeast
  • 5 gr. of salt
  • Flaked salt
  • 100 ml water + 1 tbsp bicarbonate
  • 100 ml. of water + 1 tbsp cornstarch
For mustard sauce:
  • 100 gr. of cashew nuts
  • 25 ml. of almond milk (without sugar)
  • 1 cs of nutritional yeast
  • 1 cs of Dijon mustard
  • 1 cc dill
  • 1 pinch of salt

    Preparation
    1. The night before, we soak the cashews that we will use to prepare the mustard sauce.
    2. We dilute the fresh yeast in 200 ml. of warm water.
    3. In a large bowl, mix the flour with the salt and sugar, the oil and the yeast mixture that we had prepared. Knead until you get a soft and smooth dough.
    4. Cover the dough with a damp cloth and let rise until the dough doubles in size.
    5. Using a rolling pin, roll out our pretzel dough into a more or less rectangular shape, until it is one centimeter thick. Let rise between 30 minutes and an hour.
    6. Using a pastry cutter or a knife, cut strips one and a half centimeters wide, and each cut the strip into 2-centimeter pieces.
    7. Place the pretzels on a tray lined with baking paper and preheat the oven to 230º.
    8. While the oven is heating, bring 100 ml to the boil. of water, add the baking soda and mix. With the help of a silicone brush, we generously paint the pretzels with the hot mixture of water and baking soda. Let it sit for 2 minutes.
    9. Next, mix the cornstarch in 100 ml. of water and heat over medium heat until it thickens a little. Brush the pretzels with the hot cornstarch mixture.
    10. Finally, sprinkle some flaky salt over the pretzels and bake them for about 15 minutes or until they take a golden color.
    11. To make the mustard sauce, mash the cashews (previously drained) with the almond milk until smooth. If necessary, add more almond milk until the desired consistency is achieved. Finally, we add the Dijon mustard, the nutritional yeast and a pinch of salt.
    12. We serve the pretzels accompanied by the mustard sauce.
