Place the sundried tomatoes and almond flour in a food processor and process until the sundried tomatoes form a coarse flour.

Add the remaining dry ingredients and pulse a few times to combine.
The mixture should now look like well-moistened crumbs that should hold together when you squeeze them know Alternatively, add some olive oil. If it’s too crumbly (if using almond flour), you may need to add a teaspoon or more of flour. **Pour the mixture into a bowl and refrigerate for 15 minutes. Take the bowl out of the fridge, squeeze and roll into balls. Place the balls on a baking sheet lined with parchment paper and bake at 150C (300F) for 12 minutes.
Once cooked, allow to cool completely and refrigerate for up to 2 weeks.
