Vegan sandwiches or snacks are very easy to prepare, but especially at first it can be difficult to make them because we are used to other types of ingredients of animal origin and we may lack ideas. That’s why today I want to show you my favorite sandwich. Pesto, hummus and avocado are three of my favorite ingredients, that’s why I thought of mixing them to make a sandwich and it’s a shame I haven’t done it before because it’s spectacular.

If you don’t want to complicate your life, you can eliminate the pesto and add a little nutritional yeast and garlic powder to the hummus to give it an interesting touch.

Para el pesto:

  • 1 diente de ajo
  • 1/4 taza de nueces (30 g)
  • 4 cucharadas de levadura nutricional o de cerveza
  • 2 puñados de albahaca fresca (30 g)
  • 1/4 cucharadita de sal marina
  • Pimienta negra molida al gusto
  • 56 cucharadas de aceite de oliva virgen extra

Para el sandwich:

  • 2 rebanadas de pan
  • 12 cucharadas de pesto
  • 12 cucharadas de hummus
  • Hojas de lechuga
  • Aguacate
  • Rodajas de tomate

Instructions

  1. First we are going to prepare the vegan pesto. Put the garlic, walnuts, nutritional or brewer’s yeast, basil, salt, pepper and oil in a food processor or blender. We beat until all the ingredients are well integrated.
  2. We are not going to use all the pesto, so you can make less if you want.
  3. Spread pesto on one of the buns and hummus on the other.
  4. Place some lettuce leaves, avocado and some tomato slices above. You can add salt and pepper if you want.
  5. And our sandwich is ready! You can add any ingredient you like, the good thing about sandwiches is that they always turn out well.
