Pasta salads are perfect for summer. It is a very refreshing way to enjoy pasta, they are ideal to eat away from home, to take to picnics or barbecues and in addition this recipe is so simple and easy, that it is prepared in about 15 minutes.

Ingredientes

Para la ensalada:

  • 225 g de pasta (8 oz), con o sin gluten
  • 1 taza de tomates cherry (200 g), troceados
  • 1/2 taza de aceitunas negras sin hueso (70 g), troceadas
  • 1/2 cebolla morada, en juliana
  • Un puñado de albahaca, troceada

Para el aliño (ver notas para una alternativa sin aceite):

  • 2 cucharadas de aceite de oliva virgen extra
  • 2 cucharadas de zumo de limón
  • 1/2 cucharadita de ajo en polvo
  • 1/2 cucharadita de sal
  • 1/4 cucharadita de pimienta negra molida

Instructions

  1. Cook the pasta according to the instructions on the package . Strain and cool the paste with cold water. Reserve.
  2. To make the dressing, mix all the ingredients in a bowl until they are well integrated. Reserve.
  3. Place all ingredients in a large bowl (pasta, tomatoes, olives, onion, basil and dressing), stir and serve immediately .
  4. You can store leftovers in the fridge in an airtight container for 4-5 days.

Notes

  • If you don’t consume oil, you could replace the two tablespoons of oil with one of tahini and another of water, although we prefer to use our tahini dressing when we want an oil-free alternative.
  • Lemon juice can be substituted for lime juice or vinegar.
  • Add your favorite vegetables, herbs (fresh or dried), spices and ingredients.
