We have decided to make an improved version of the pancakes that we published at the beginning on the blog, among other things because they looked monstrous, worthy of a horror movie and because they are also pancakes are vegan, wheat and sugar free.

It is the lightest and healthiest version of pancakes that we have tried, but best of all, they are even richer, they are perfect! We have accompanied them with banana and agave syrup, but you can add another syrup, jam, fruit and any other ingredient that comes to mind.



  • 1 taza de harina de arroz (150 gramos)
  • 1 taza de harina de avena (120 gramos)
  • 2 cucharaditas de levadura (sin gluten)
  • 1/2 cucharadita de sal
  • 1 cucharadita de canela en polvo
  • 1 taza de leche de soja (250 mililitros)
  • 2 cucharadas de sirope de agave
  • 2 cucharaditas de extracto de vainilla (opcional)
  • 1 cucharada de aceite de oliva virgen extra
  • 2 plátanos


  1. In a bowl, mix all the dry ingredients (rice flour, oatmeal, yeast, salt and cinnamon). In another container, mix the liquid ingredients (soy milk, agave syrup, vanilla extract, and oil).
  2. Add the two chopped bananas to the liquid ingredients and beat with a mixer. You can also add the bananas mashed with a fork if you don’t mind finding small pieces of banana. Add the dry ingredients to the mixture and mix again.
  3. Put a drop of oil in a pan and spread it with a paper towel. When it is hot, add 1/4 cup of the dough and leave for about 2 minutes on each side. We know that we have to turn the pancake when the edges are golden and it is easy to turn it with the help of a spatula.
  4. We serve with agave syrup and chopped banana.
