Vegan mussels


  1. 250g mushrooms
  2. ½ sheet of nori
  3. 1 small white onion
  4. 2 to 4 cloves of garlic
  5. Oil
  6. Pin of salt
  7. 100 ml hot water
  8. Soy cream or soy milk


  1. Chop the mushrooms into bite-sized pieces, but in fairly large pieces, then toss in a little oil.
  2. Cook for about 20 minutes until cooked and most importantly – soft. They will shrink in the oven, so don’t oversize them. You can use any type of mushroom.
  3. Cut nori into strips, then soak in hot water for about 5 minutes. If the leaf isn’t that salty, you can add your own.
  4. While the nori is soaking, chop a small white onion and sauté it in a pan with a little oil. Once softened, add a few cloves of garlic before adding the nori and the water it was soaked in.
  5. Add in the mushrooms and some soy milk (or heavy cream if using). the pan and stir until everything is mixed nicely. Add a little more water depending on how dry or not the dish is.
  6. Serve and enjoy!
