Vegan lemon or orange cake


  • 3 cups of flour
  • 2 cups of soy/oat/rice milk
  • < li itemprop="ingredients">1 cup of sunflower or olive oil but normal (if you do it with extra virgin it tastes only like oil)

  • 2 cups of panela or 1 and 1/3 white sugar
  • Zest of one lemon and/or one orange
  • 1 cup of walnuts (or other dried fruit) < /li>


Mix the flour, the panela or sugar, the non-dairy milk, the oil, the yeast and the lemon/orange zest (if you want to make chocolate add the cocoa as well) with the blender and when it is well beaten without lumps, add the nuts, stir well and put the mixture in a baking pan greased with a little oil, flour, breadcrumbs or vegetable margarine (only one thing).

Put it in the oven at 180º for half an hour.

Do not open the oven before the dough rises and about 10 minutes have passed since it can go down completely.

Before taking it out, prick it with a knife and when it comes out clean, take it out and cool. the flavor improves over time over a two day period, but not because it will start to get tough.
