Eggs Benedict are a brunch classic, that’s why I wanted to prepare a vegetable version and I started by making this delicious vegan hollandaise sauce.

A brunch is a meal that combines breakfast (breakfast in English) with lunch (lunch). Basically it is a kind of late breakfast that is usually heavy and that is why it also replaces lunch.

  • 170 g de tofu firme (6 oz), sin el líquido
  • 1/41/2 taza de agua (65125 ml), ver notas
  • 2 cucharadas de levadura nutricional o de cerveza
  • 1 cucharada de tamari o salsa de soja
  • 1 cucharada de zumo de limón
  • 1 cucharada de tahini
  • 2 cucharaditas de mostaza
  • 1/41/2 cucharadita de cúrcuma, ver notas
  • 1/4 cucharadita de sal negra o Kala Namak (opcional), ver notas
  • 1/8 cucharadita de pimienta negra molida

Instructions

  1.   2. Cook the sauce in a saucepan for 2-3 minutes over medium-high heat or until heated through, stirring occasionally.
  3. Serve immediately over some vegan eggs Benedict or as a side I eat all kinds of dishes such as grilled vegetables.
  4. You can store it in the fridge in an airtight container for about 4-5 days. It is normal for it to thicken when it rests in the fridge, just add a little water when you go to heat it until it has the desired consistency.

Notes

  • We added 1/2 teaspoon of turmeric to give it a powerful color, but if you don’t like the taste of turmeric too much, I recommend you add add only 1/4 teaspoon, or even less.
  • We add 1/4 cup (65 ml) of water, but it depends on how thick you want your sauce, you have to keep in mind that when cooking it will thicken and also when it cools. The sauce you see in the photos was denser because it got cold while we were taking the photos. You can also add more water if the sauce becomes too thick when cooking.
  • The black salt or Kala Namak gives it an egg flavor (you can buy it in some supermarkets and herbalists), but if you don’t find, replace it with any other type of salt.
