Goulash or goulash is a meat stew typical of Hungarian cuisine. There are a thousand different recipes on the internet, so I’m not quite sure what the original version is, but I used this recipe as inspiration, since it is from Hungary and also our Vegan Textured Soy Stew.

- 55 g de soja texturizada gruesa (2 onzas)
- 2 cucharadas de tamari o salsa de soja
- 2 dientes de ajo, finamente troceados
- 1/2 cebolla, finamente troceada
- 1 pimiento verde grande (贸 2 peque帽os), troceado
- 2 zanahorias grandes (140 g 贸 5 onzas), peladas y cortadas en trozos grandes
- 1 patata mediana (225 g 贸 0,5 libras), pelada y cortada en trozos grandes
- 2 cucharadas de harina, nosotros usamos harina de arroz integral
- 1 lata de tomate triturado (400 g 贸 14 oz)
- 1 taza de caldo de verduras o agua (250 ml)
- 2 cucharadas de tomate concentrado (opcional)
- 2 hojas de laurel
- 1 cucharada de piment贸n dulce
- 1/4 cucharadita de pimienta negra molida
- 1/4 cucharadita de sal
Instructions
- Soak coarse textured soybeans in a bowl with hot water (we put 2 cups or 500 ml) and 1 tablespoon of tamari or soy sauce for at least 15 minutes. Strain and reserve.
- Put the garlic, onion, green pepper, carrots and potato in a pot along with a splash of water or oil and cook over medium-high heat 5 minutes, stirring occasionally. Add more water or oil if necessary.
- Add the flour and cook for 1 minute, stirring constantly.
- Then add the crushed tomato, the vegetable broth or water, and the concentrated tomato, stir and when it starts to boil add the other tablespoon of tamari or soy sauce, the textured soy, the bay leaves, the paprika, pepper and salt. Stir and cook 25 to 30 minutes over medium heat with lid on or until potato and carrot are tender, stirring occasionally. Remove bay leaves and serve immediately.
- You can store leftovers in an airtight container in the fridge for 4-5 days.
Notes
- We have only prepared the goulash with coarse textured soybeans, but I guess it could also be good with fine textured soybeans or even tofu. If you are going to use tofu and take oil, the ideal is that you saut茅 it a little first so that it is not so soft.
- The tamari or soy sauce is optional. Textured soy can be soaked only in water or in vegetable broth a> and add more salt to the stew.
- The crushed tomato can be substituted with whole tomatoes, canned tomatoes or tomato sauce.
- Add your vegetables, spices and herbs preferred.
- The sodium content is lower, since in step 1 we soak the soybeans in water and tamari or soy sauce, but that liquid is discarded and is not fully absorbed.
< li>If you prefer your goulash more like a soup than a stew, you can add more broth or water.
