  • Preparation

  • Line a baking dish with parchment paper. Preheat the oven to 135¬įC. Drain dates (save soaking water) and stir in maple syrup, oil, 1/4 cup milk/soaking water, salt, cinnamon, and 1 tablespoon grated coconut until smooth. (Add another tablespoon of soaking water to aid in mixing, if needed).
  • In a large bowl, combine oatmeal, coconut, pecans, pumpkin seeds, flaxseed, and chia. You can also add 1/4 cup chopped nuts or seeds of your choice.
  • Mixed date mix add and mix well until all dry ingredients are coated. Sprinkle a good pinch of salt over the mixture.
  • Transfer on a baking tray or plate lined with parchment paper. Bake at 275 degrees F for 35 minutes, then flip the pan. After 15 minutes, stir the granola and bake an additional 20 minutes or until crisp. (total 65-75 minutes)
  • Let cool for 5 minutes , then mix in the dried fruit of your choice. Allow to cool completely before storing. 

    Store in an airtight glass container for up to 1 month. Serve over oatmeal, chia pudding, yogurt, smoothie bowls, etc.
