The pancake dough is the one I always prepare and it is very easy, the only difference is that today I used a alternative to the egg called «Veggs» in the version for sweets. It is very well priced, it costs around €3 and gives for many uses. It is also gluten free.
Ingredients
1 cup of wheat flour
Optional: 1/3 cup of veggs egg alternative
< p>2 tsp baking powder
1 and a half cups oat milk (if you don’t use veggs, use slightly less non-veg milk)
2 tbsp syrup (+ extra)
2 tablespoons liquid vanilla
Olive oil
Toppings:
Vegan cream cheese
< p>Optional: vegetable margarine to decorate.
Step by step
- Mix all the ingredients for the dough and mix by hand with a few rods, until there are no lumps.
- Put 2 tablespoons on a non-stick frying pan, lightly greased with olive oil (just stain the base with oil-stained paper).
- Keep the heat on low, and wait for the dough to dry and make “bubbles”.
- Turn over with a wooden stick to brown the other side.
- Wait for it to brown and reserve on a plate.
- We place them in the shape of a mountain, and fill with vegan cream cheese between the pancakes. Cover with syrup and decorate with a cube of vegetable margarine. Enjoy!
