Vegan combo plate: vegetables and legumes (cooking with leftovers)

Very good morning to all! Today I share another of those recipes for use.

The fact is that the other day several ingredients were put together again that I had to consume now. And as you know, when that happens, what I do is prepare mixed dishes or vegan bowls.

Ingredients

3 handfuls of flat beans (I used fresh)
100 gr of cooked chickpeas
1 cup of water
4 mushrooms
100 gr of Tofu
2 Garlic
Dried parsley
Turmeric
Curry
Black salt or kala namak salt
Olive oil
Optional: sesame seeds

Step by step

  1. To start, we remove the block of tofu from the water and dry it with a clean cloth.
  2. With washed hands, shred the tofu into crumbs
  3. Add two turmeric shavings and a teaspoon of curry on top and stir.
  4. Finally, add three or four pinches of salt black and stir again. Let rest.
  5. On the other hand, wash and cut the flat beans into small strips
  6. With a splash of olive oil grease the base of the pan, sauté the beans raw.
  7. When they are lightly toasted, add a cup of water and keep the beans at a very gentle boil.

  8. When the water is consumed, remove the beans and place them in the bowl.
  9. Continue to slice the mushrooms and finely chop the garlic .
  10. Sauté the garlic with olive oil and, when it is slightly toasted, add the mushrooms.
  11. Sauté the mushrooms until golden brown and add generous parsley
  12. Remove and serve in the bowl
  13. Wash the pan and dry sauté (without oil) the tofu crumbs until they brown a little ito.
  14. To give it more egg flavor, just add more black salt.
  15. Remove and serve in the bowl
  16. Finally, sauté with another splash of oil the chickpeas until they toast a little.
  17. We serve in the bowl and enjoy all the incredible variety of flavors and textures of this combined dish rich in vegetable protein.
