Summer is here and although we always feel like cooking, the truth is that we want to spend less time in the kitchen and make simple and quick recipes, like this delicious vegan Chinese rice.

It is a fairly light dish, although we will give you an alternative to make it even lighter, in case you are on a diet or if you prefer to eat with less fat, in addition, both versions are delicious.

Ingredientes

  • 1 taza de arroz (200 gramos)
  • 1/2 taza de maíz (80 gramos)
  • 1/2 taza de guisantes (80 gramos)
  • 1 ó 2 cucharadas de aceite de oliva virgen extra
  • 2 dientes de ajo
  • 1/2 cebolla
  • 1 zanahoria
  • 2 cucharadas de salsa de soja o tamari

Instructions

  1. Cook the rice according to the manufacturer’s instructions and let cool. Ideally, you should cook it the day before.
  2. If you are using fresh or frozen corn or peas, cook them according to the manufacturer’s instructions, if you use canned or skip this step.
  3. In a wok or pan, add oil and cook over medium-high heat the finely chopped garlic cloves and onion and the carrot in dice for a couple of minutes. Add the peas and corn and leave for another couple of minutes.
  4. Add the rice, soy sauce and cook for a couple of minutes or until the rice is hot.
