There is nothing so comforting when it’s cold than a hot drink or a good plate of spoon. Although we must consume legumes throughout the year, it is in winter when we usually want them the most.

Vegan chili is one of the legume recipes that I make the most, in fact there are several versions on the blog, but this is the one that I like the most.



  • 1 cucharada de aceite de oliva virgen extra, opcional
  • 4 dientes de ajo, troceados
  • 1/2 cebolla, troceada
  • 1/2 pimiento verde grande ó 1 pequeño, troceado
  • 1/2 pimiento rojo, troceado
  • 1 zanahoria mediana, troceada
  • 1/2 taza de vino tinto (125 ml), opcional
  • 1 cucharada de comino molido
  • 2 cucharaditas de orégano
  • 1/2 cucharadita de pimentón
  • 1/4 cucharadita de pimienta negra molida
  • 1/4 cucharadita de sal
  • 1/8 cucharadita cayena molida, opcional
  • 2 cucharadas de tomate concentrado
  • 1 lata de tomates troceados (400 g ó 14 oz)
  • 1 taza de alubias negras cocinadas o de bote (190 g)
  • 1 taza de alubias rojas cocinadas o de bote (180 g)
  • 1 taza de lentejas cocinadas o de bote (200 g)
  • 1 taza de maíz congelado (140 g)
  • 2 tazas de caldo de verduras o agua (500 ml)


  1. Pour the oil into a pot and when is hot add the vegetables (garlic, onion, green pepper, red pepper and carrot). Cook over medium-high heat for about 5 minutes, stirring occasionally. If you don’t want to use oil, you can add a little vegetable broth or water.
  2. Add the red wine and cook over high heat for 1-2 minutes, stirring frequently until the alcohol evaporates.
  3. Add the rest of the ingredients, stir and cook over high heat until it starts to boil. Then cook over medium-low heat for about 30-40 minutes.
  4. Serve immediately (I sprinkled some fresh parsley on top) or store leftovers in a airtight container in the fridge for about 5-7 days.


  • You can use whatever vegetables, spices and herbs you want.
  • The canned tomato can be substituted for fresh tomato, although in that case it is likely need to add more vegetable broth or water.
  • You don’t have to add 3 different types of vegetables, you can use just one or whatever you want.
  • If you don’t like the spicy food, omit the cayenne.
