At home we often eat burritos, but usually inside a tortilla when we want a lighter lunch or dinner (we don’t eat anything else). They are to shoot rockets. Another option is to make the tortillas at home, but it is not practical for us on a day-to-day basis, so this burrito in a bowl is a perfect alternative.

Instructions

  1. We cook the rice and corn following the package instructions. We don’t add salt to them.
  2. We prepare the fat-free vegan refried beans following our recipe.
  3. Julienne the red cabbage and lettuce, slice the avocado, dice the tomato and the coriander finely.
  4. We assemble the burrito in a bowl. We place the rice, refried beans, red cabbage and lettuce below and the rest of the ingredients on top.
  5. Add seasoning to taste.
  6. If we are not going to consume it immediately, it is better not to add the dressing. We can keep it in the fridge in an airtight container for 2 or 3 days, although it is better freshly made.
