Sopa de Br贸coli y Queso Vegano - Esta sopa de br贸coli y queso vegano es muy sabrosa, saludable, baja en grasa y muy sencilla. Es perfecta como primer plato o para una comida o cena ligera.

Ingredientes

  • 2 tazas de patata (360 g)
  • 1 taza de zanahoria (135 gramos)
  • 1/2 taza de br贸coli, sin el tallo (250 g)
  • 2 tazas de caldo de verduras (500 ml)
  • 1 taza de leche vegetal sin endulzar (250 ml), nosotros usamos leche de soja
  • 1/2 taza de levadura nutricional o de cerveza (35 g)
  • 1 cucharada de zumo de lim贸n
  • 1 cucharadita de sal
  • 1/2 cucharadita de ajo en polvo
  • 1/2 cucharadita de cebolla en polvo
  • 1/8 cucharadita de pimienta negra molida

Instructions

  1. Peel and dice the potatoes and carrots and steam them for about 20 minutes or until tender. You can also cook them.
  2. Meanwhile, also steam the chopped broccoli for about 5-10 minutes or until tender.
  3. When the vegetables are cooked, add them to a blender along with the rest of the ingredients and blend until well combined.
  4. Add the soup in a saucepan and cook over medium-high heat for about 5 minutes.
  5. Serve and garnish as desired (we added toasted croutons and chopped fresh parsley).< /li>
  6. You can store the vegan broccoli cheese soup in an airtight container in the fridge for 4-5 days.

Notes

  • In addition to the broccoli you can add any vegetables you like, as well as other spices or herbs.
