tried textured soy for the first time in Germany a couple of years ago and was not convinced. A few months ago I decided to give it another try and I didn’t like it too much either, but since they say that the third time is the charm, I made another attempt and this time I was completely captivated. The same thing happened to me with tofu, at first I couldn’t even see it and now I couldn’t live without it.



  • 1/2 cebolla, troceada
  • 1/2 ramita de apio, troceada
  • 1 zanahoria mediana, troceada
  • 2 tazas de soja texturizada fina (150 g)
  • 1 cucharada de tamari o salsa de soja
  • 1/2 taza de vino tinto (125 ml)
  • 1/4 taza de concentrado de tomate (4 cucharadas)
  • 3 tazas de caldo de verduras o agua (750 ml)
  • 1 cucharada de or√©gano seco
  • 1/4 cucharadita de sal (opcional)
  • 1/8 cucharadita de pimienta negra molida


  1. Add a splash of extra virgin olive oil extra water or vegetable broth in a saucepan and cook the vegetables (onion, celery and carrot) for about 5 minutes over medium-high heat, stirring occasionally.
  2. Add the textured soy and tamari or soy sauce. Cook for a couple of minutes, stirring occasionally.
  3. Add the red wine and cook for another couple of minutes.
  4. Mix the tomato paste and bouillon in a bowl until well combined.
  5. Pour the tomato paste and bouillon mixture into the pan along with the rest of the ingredients (oregano, salt and pepper), stir and cook for about 10 or 15 minutes over medium-high heat.
  6. We serve it with pasta (300 g or 10 ounces raw) and our vegan parmesan cheese.
  7. You can store the sauce in an airtight container in the fridge for about 4-5 days.


  • You can add any vegetables or spices.
  • Tamari or soy sauce can be substituted for salt and wine for more vegetable broth or water .
  • The traditional recipe is made with tomato paste and broth or water, but if you want you can add ketchup. In that case I would add less broth and more tomato sauce.
