Vegan Banana Scones that are flaky and tender with a golden crust and a delicious banana bread flavor thanks to cinnamon, vanilla and toasted nuts!  No added oil! Gluten free and nut free options

Ingredients

  • 2 bananes moyennes
  • < span class="wprm-recipe-ingredients-units-system wprm-recipe-ingredients-units-system-1">1/4 cup (55 g) Sugar Roux ou utilise to une boîte ordinaire e sucre et ajouter 1 cuillère à café de mélasse avec les ingredients wetters, divided
  • 1 tsp cannelle divisé< /li>
  • 1/2 càc vanilla and extrait
  • 2 cups < /span> (250 g) de farine Use 1.5 cup tout use and 1/2 cup de blé entier
  • 2 à soups farine d’amande
  • 2 càc leverure-en-poudre
  • 1/4 TL bicarbonate de soude
  • 1/3 cup < /span> (40 g) pacanes ou noix hachées
  • 1/2 TL < span class="wprm-recipe-ingredientname">sel
  • 1 cup< /span> (240 ml) du lait de coco utiliser du lait de coco entier et au hello 1/3 de cup de crème de coco. Refroidissez la boîte pendant quelques heures avant de l’utiliser.
  • Preparation

  • Caramelize the bananas: Slice the bananas and add them to the pan, add 2 tbsp brown ones Add the sugar and half the cinnamon and 1 tsp coconut milk, stir and cook over medium heat until the banana starts to brown.  It may take 5-6 minutes. When you’re happy with them, let them cool. Caramelizing the bananas adds a nice depth of flavor and keeps the scones from going too soft like a cake.
  • < span style="display: block;">Preheat oven to 435°F. Line a baking sheet or dish with parchment paper.
  • To make the scones, combine the flour, almond flour, baking powder, and baking soda in a large bowl and whisk well. Add the sugar, pecans, salt, and spices and mix.
  • Add 3/4 cup heavy cream/chilled coconut milk and cut with a fork to mix well. Add the caramelized bananas and continue slicing with a fork. The mixture is very dry at first, and then begins to turn into greasy crumbs and batter. Add another tablespoon of coconut milk as needed.

    Once the dough starts to form, bring everything together together with a spatula or your hands. Work quickly and shape the dough into a disc. It should be at least 3/4 inch tall. Cut the dough into 6-8 triangles using a pizza cutter or a sharp chef’s knife.

  • Place the scones on a baking sheet and bake for 17-18 minutes.
  • < span style= "display: block;">Remove from pan, let cool and serve.
