I open my blog with this “banana bread” or marbled banana and chocolate cake. Of course it’s vegan, and it’s also super easy to make.

  • 250 gr. of very ripe banana
  • 1 cc of vanilla extract
  • 2 cs of oil
  • 80 ml. of any natural vegetable milk (low or no sugar)
  • Water (about a glass)
  • 3 cs of cocoa
  • 150 gr. of sugar
  • 180 gr. of flour
  • 1 cc of baking soda
  • Salt

  1. Preheat the oven to 180º.
  2. Sift the flour and put it in a more or less large bowl. We add the sugar, bicarbonate of soda and salt and mix with the rods.
  3. With the help of the blender, mash the bananas until they are pureed and add the vanilla extract, oil and vegetable milk. We mix everything and pour it into the bowl where we have the flour. Mix well with the spatula and set aside.
  4. Now we will prepare the cocoa to make part of the chocolate dough. We put the glass of water to boil in the microwave (approximately 1 minute and a half at maximum power). In another glass, put the three tablespoons of cocoa. Little by little, we are pouring part of the water that we have boiled and we are mixing it with a fork. We will pour water until the cocoa dissolves and a creamy paste remains.
  5. Once we have our cocoa mixture, in that same glass we add dough (the one we have previously prepared and that we have in the bowl) until the glass is filled. Mix well until cocoa and dough are well integrated. To the rest of the dough that remains in the bowl, we add 3 tablespoons of boiling water and mix.
  6. Now we have two doughs: the vanilla and the of chocolate. We grease the mold and begin to pour a little of each type of dough, randomly, so that the colors are distributed irregularly. Let it bake for about 55 minutes. When you take it out of the oven, let it rest for about 5 minutes. and then we unmold it and let it cool on a rack.
