Today I want to share with you one of the recipes from the book, these delicious vegan apple custard.

Custard was one of my favorite desserts when I was not vegan and the truth is that this version is amazing, it also has a delicious apple flavor and it is a very easy recipe to make. They’re ready in about 15-20 minutes, but then you have to wait for them to cool down, which is the trickiest part because they smell great and look great, so it’s hard to resist.



  • 2 manzanas
  • El zumo de medio lim贸n
  • 4 cucharadas de sirope de agave o de az煤car de coco
  • 4 tazas de leche de avena (1 litro)
  • 1 trozo de una vaina de vainilla (unos 2 cent铆metros 贸 1 pulgada)
  • 1 rama de canela grande 贸 2 peque帽as
  • 1 贸 2 cucharaditas de agar agar en polvo


  1. Peel the apples and chop them.
  2. In a saucepan add the apples, lemon juice and agave syrup or coconut sugar (or whatever sweetener you like). Cook for about 5 minutes so the apple breaks up and softens.
  3. Add the milk, vanilla, and cinnamon and turn the heat up to high. When it starts to boil, lower the heat and cook for about 5 minutes.
  4. Add the agar agar powder and cook for about 5 more minutes.
  5. Remove the cinnamon stick, whisk in the custard and serve in individual bowls. If they don’t have a perfect texture when cooled, you can beat them again before serving.
