Vegan and healthy Tupperware for work

Good morning guys! Today I bring you a post that you have asked me a lot over the years and because of how simple it was, I had never dared to do it: a few ideas to prepare easy and healthy vegan tupperware to take to work.< /strong> The combinations/amounts are based on what I usually prepare. I already tell you that I eat a lot. Hahaha.

The objective is to be able to plan meals well and that the rush of the routine does not become an excuse to give up eating vegan, healthy and varied. In fact, this concept begins to spread quite a lot under the name «Batch Cooking». Surely you have heard of him by RRSS.

Ingredients

Vegan Tupper 1: Rice, chickpeas, smoked tofu and cherry tomatoes
1/2 cup of long rice
2 cloves of garlic
1/2 onion
4 tablespoons of cooked chickpeas
4 slices of smoked tofu (I love Aldi’s)
4 cherry tomatoes
Oil Olive
A pinch of salt
Oregano
Black pepper

Vegan Tupperware 2: Salad base with baked vegetables
1 medium potato< br> A handful of mushrooms
A handful of green peppers (small, padron pepper type)
1/3 of broccoli
A handful of peeled walnuts
1/4 of aubergine
Mix Salad
Olive Oil
Black Pepper
Oregano
Rosemary
Salt

Step by step

Vegan tupperware 1: Rice, chickpeas, smoked tofu and cherry tomatoes

A rice-based tupperware, legumes (chickpeas and soy) and cherry tomatoes. Easy, fast, vegan and healthy. It has the advantage that the ingredients last several days without any problem 🙂

  1. We will start by preparing the rice. To do this, take a medium-sized pot, grease the base with a drizzle of olive oil and turn on medium heat.
  2. Peel two garlic cloves and cut them in half vertically. When the oil is a bit hotter, add the garlic and toast on both sides.
  3. Then, lowering the heat to medium-low, add the half cup of rice and toast (without stopping stirring) for a couple of minutes.
  4. Meanwhile, we heat a little more than 1 cup of water.
  5. When the water is already hot, without needing to boil, we put it in the pot and we raise the fire of this to medium power.
    For the first vegan tupper, we cook the rice with two garlics.

  6. Let cook until all the water has been absorbed.
  7. On the other hand, peel and cut the onion into small pieces. Place it on a frying pan or griddle and brown it. When it is golden, add the chickpeas and toast them, along with a pinch of salt, oregano and pepper.
  8. Meanwhile, on the same griddle or another pan, heat a dash of olive oil. Cut the smoked tofu into slices, place it in the pan and toast on both sides.
  9. When all the ingredients are ready, place a base of rice along the entire length of the Tupperware. Then, divided into small sections, the chickpeas with onions, the sliced smoked tofu and the cherry tomatoes cut in half. You can orient yourself in the design with the last photo below.

Vegan Tupper 2: Spiced potatoes, salad and roasted vegetables< /h3>

A fairly basic but varied tupperware, it is something like a mix between salad and grilled vegetables. It takes a little longer to make, but the good thing is that it is made by itself. Basically you have to cut the vegetables and let them roast in the oven.

  1. Preheat the oven to 180 degrees.
  2. Wash and cut the potatoes into wedges . We spice them with oregano, salt, black pepper and a pinch of rosemary.
  3. Put them in the oven (preferably without oil, but with parchment paper) and continue cutting the other vegetables.
  4. We cut the aubergine into thin slices,  Cut the broccoli into small heads and wash the peppers
  5. When the potatoes begin to colour, remove the tray from the oven and add the rest of the vegetables, to which we will pour a little olive oil over olive oil.
  6. Bake for about 15 more minutes, or until all the vegetables are golden.
  7. Remove from the oven.
  8. Place a good base of mix of salad in the tupper, the peeled nuts and, on top, the previously baked vegetables.
  9. Ideally, do not close the tupper immediately to prevent the vegetables from getting soft or moist.
  10. Vegetarian / vegan Tupper to take to work. Easy , healthy and nutritious.
