Flatbread with tomatoes, wheat and sprouted quinoa. Use it on sandwiches or as a snack. Vegan recipes. 

Ingredients

  • 2/3 cup ( 114.58 g ) brown sugar + 1/4 more to pepper √©pousseter
  • 1/2 tasse ( 60 g ) whole grain flour (Use the brown sugar for the little ones and little ones) < / span>
  • 3 soups-in-soup Quinoa Germ√© (can be replaced with quinoa cut or left on the side or use any other grain ger m√©)
  • 1 cuill√®re √† caf√© gross sugar or equivalent jaggery / agave / syrup d’√©ble or other edulcorants.

  • 1/4 cup ( 60 ml ) eau
  • 2 Cuill √®res √† soupe Huile d’olive vierge
  • 3/4 coffee spoon ( 0.75 spoon ) sel ou au go√Ľt
  • 1 tomate roma ou toute tomate moyenne juteuse

    Preparation

  • Add the yeast and 1 teaspoon sugar to 2 tablespoons warm water and mix well. Let stand 10 minutes or until foamy.
  • Mix the pod tomatoes, salt, oil and sprouted quinoa into a well-mixed mash.
  • Add flour, basil to yeast mixture and mix.
  • Add tomato puree and mix for a few seconds.
  • Knead the dough for 4 -5 minutes by hand or with a blender, scraping the sides every 2 minutes if using a stand mixer. If necessary, add more bread flour or water in small amounts to make a soft dough.
  • Place the dough in a greased container give, spray it with water and then oil. Cover with a cloth and let rise for an hour. You can store the dough in the fridge for up to 2 days at this point.
  • If chilled, let the dough rest outside for an hour, so that it reaches normal temperature.
  • Divide the dough into 3-4 balls depending on the size of the flatbread you want. (Or you can shape it into a loaf, place in a small loaf pan, let rise 30 minutes and bake at 350 degrees F for 20 minutes.)
  • Form into balls and place on a well-floured surface. I made 5 inch rounds, nice thick flatbreads that we can use as buns for our portabello sandwiches.
  • One Heat the grill pan over high heat and when the pan is hot, grill the flatbreads for 2-3 minutes on each side. Use a heavy-bottomed pan or grill pan, heated well over high heat. Or bake like a flatbread on a hot pizza stone in a preheated 450 F oven.
  • Cut flatbread into triangles and dip in herb olive oil or eat as is. or use it for your favorite burger/sandwich! Have a nice day!
