Tomato sauce


  • 1/2 kilo of ripe tomatoes .
  • 1 dl olive oil.
  • 1 chopped onion .
  • 1 chopped green pepper.
  • 1 tablespoon salt and one tablespoon sugar.
  • 1 fresh basil leaf


Scald the tomatoes in boiling water and peel them. Cut them into quarters and set them aside.

Sauté the onion and pepper in the olive oil until they begin to colour, add the tomatoes, salt and sugar and cook over low heat for 40 minutes uncovered adding the basil halfway through cooking. Pass through a food mill to prevent it from turning orange and correct the seasoning if necessary.
