We inaugurate the new season with some salty puff pastry tarts. A tasty and simple proposal that can serve as an entree or snack. In the market there are several doughs that do not contain animal ingredients, so the next time you go to the supermarket take a look at the ingredients of the puff pastry. Surely you will find some vegan dough that you can use.

  • 1 packet of round puff pastry
  • 1 zucchini
  • 3 pear tomatoes
  • ½ onion
  • Oil
  • Salt

  1. Cut the courgette into very thin slices. Remove the skin from the tomatoes and cut them into squares. Julienne the onion and cut the pieces in half again. If the pieces are very long and fall out of the mold, we will cut them in half. Grease and salt the zucchini slices. We do the same with the tomato and onion.
  2. Grease the molds with a little olive oil. With the help of a bowl or any other 15 cm round object, cut 5 round portions of dough. Line the molds with the dough, pressing carefully and cut the dough that has been left out of the mold.
  3. We heat the oven to the temperature indicated by the manufacturer . Meanwhile, we will go the tartlets to taste. I have started with a courgette base, followed by onion and tomato. Before putting the tartlets in the oven, you can give them a final touch, adding some pine nuts, some dried herbs or spraying a little flavored olive oil like I did.
  4. We bake the tartlets according to the instructions that come with the dough on the grid. When the tartlets are golden brown, remove them from the oven using the same rack and let them cool before serving.
