The sun makes me happy, the heat too, but for me it is more important that it is not cloudy and since we have been sunny for more than a week here in Cologne I am delighted, we are even having better weather than in Spain! ?  We have less than a month left in Germany and although I can’t wait to go back, there are many things that I will miss here, such as supermarkets, they have a huge variety of vegan things and you can find all kinds of products ecological.

Today we bring you the first salty breakfast of the series! If you are more salty than sweet, you are going to love this recipe because it is very good and it is prepared in less than 10 minutes. It is so simple that anyone can prepare it, but it is worthy of a great chef!

Ingredientes

  • 6 tomates cherry
  • 1 cucharadita de vinagre balsámico o de Módena
  • 1/2 aguacate
  • 1 diente de ajo
  • 3 rebanadas de pan (con o sin gluten)
  • Albahaca fresca
  • Sal marina
  • Pimienta negra

Instructions

  1. Chop the tomatoes and put them in a bowl .
  2. Add the vinegar and stir.
  3. Cut the avocado into strips and the garlic very finely.
  4. You can toast the bread or not, it’s optional, we don’t toast it.
  5. Place the avocado on the bread, add the cherries, the chopped garlic clove and finally chopped fresh basil, salt and pepper to taste.
