Tomates rellenos (RAW FOOD)


  • 5 round tomatoes (called tomatoes < / span> apples)
  • 1 small onion or 1/2 large onion
  • 3 handfuls of peppermint or cilantro to taste
  • < li itemprop = "ingredients"> 1 large lemon or 2 small

  • 2 pinches sea salt
  • Pepper to taste
  • < li itemprop = "ingredients"> 4 lettuce leaves DECORATION

  • 1 cup cooked rice OPTIONAL
  • 5 cuch organic olive oil pressed into cold


Cut off the tops of the tomatoes, as a “lid”. do not peel them.

With a spoon, scoop out the content of each tomato and place it in the same bowl, without breaking what remains of the tomato.

Crush the pulp that you removed well and add it , finely chopped onion, mint or coriander, according to your taste, lemon and sea salt and olive oil. Add more salt and pepper if necessary.

Mix well.

Place the mixture inside each tomato until it is full and cover them with the part you removed at the beginning and decorate them with chopped lettuce.

Chill in the fridge for a few hours and eat with lettuce salad with toasted sunflower seeds, dressed with an olive oil and balsamic vinegar vinaigrette.

OPTIONAL: you can add 1 to this same recipe cup of cooked brown rice that you have left over from another meal and thus make them stuffed with rice, onion, mint. Add to the same recipe about 5 more tomatoes, double the olive oil, sea salt, pepper and lemon if necessary.
