Vibrant roasted salsa verde with tomatillos, jalapeƱos and lots of lime. A simple oven roasting technique produces an intense smoky flavor. Only 7 ingredients and 30 minutes needed!

Ingredients

  • 1 book < span class ="wprm-recipe-ingredient-name">Tomatillos, peeled, rinsed
  • 1-2 whole jalapenos (per according to spice preference)
  • 1/3 cup Roughly chopped white onion< /li>
  • 3 Cloves Garlic, peeled
  • 1/2 cup lightly packed fresh coriander
  • 1 tablespoon lime juice
  • 1/2 ā€“ 3/4 cc Sea Salt

Instructions

  • Preheat the oven to 230Ā°C and line a baking tray. Possibility to lightly grease the baking tray with avocado oil for easier cleaning.
  • Place whole tomatillos (skinless) and whole jalapeƱos on the baking sheet. Bake for 15 to 20 minutes or until golden and bubbly, turning with tongs halfway through cooking. Take out of the oven and let cool down a bit. When cool enough to touch, remove and discard the jalapeƱo stalks.
  • To a Food Processor (or high-speed blender), chopped onion, garlic, cilantro, lime juice, salt and roasted jalapeƱos and tomatillos. Mix until well blended. Taste and adjust as needed, adding more lime juice for acidity, jalapeƱo for spiciness, garlic for spiciness, cilantro for freshness, or salt for overall flavor.

  • Enjoy hot, at room temperature, or chilled and serve with tortilla chips, Tacos, Enchiladas, Scrambled Tofu, Chilaquiles or taquitos.
  • Best fresh as it will thicken once it cools (just stir and add a little water or lime juice to thin as needed). Store leftovers, covered, in the refrigerator for up to 4-5 days or in the freezer for up to 1 month.
