Ingredientes

Scale

  • 1 pepino grande ó 2 pequeños
  • 1/2 cebolla morada
  • 1 cucharada de zumo de limón
  • 1 cucharada de azúcar de caña, de coco o moreno
  • 1 cucharada de aceite, nosotros usamos aceite de coco
  • Sal al gusto
  • Cayena molida al gusto (opcional)
  • 2 cucharadas de cacahuetes troceados

Instructions

  1. Slice the cucumber into thin slices and julienne onion and place in a bowl.
  2. To make the dressing, mix the ingredients (lemon juice, sugar, oil, salt and cayenne pepper) in a bowl or bowl and pour the dressing over the cucumber and onion.
  3. Stir until all the ingredients are well combined and sprinkle the peanuts on top.
  4. The salad is best fresh, although if you want you can store the vegetables and dressing separately in airtight containers in the fridge for 3-4 days.

Notes

  • You can use whatever sweetener and oil you like.
  • You can also use vinegar instead of lemon juice and any other nuts instead of the peanuts.
  • If you don’t use oil, you can substitute two teaspoons of tahini or any nut or seed butter and one water (mix until fully incorporated).
