Put the soybeans in a large bowl and cover it with water (in this type of recipe I prefer to use bottled or filtered mineral water). finely chop the garlic cloves and chives and add them to the bowl along with a bay leaf, two or three cloves, a few balls of pepper (the amount… to taste), cumin, a good spoonful of paprika , salt and a good splash of olive oil. stir well to mix the flavors and let stand for at least an hour (although I recommend a little more to make it tastier); if we see that the soybeans absorb the broth very quickly, we add a little water to prevent it from becoming hard.
Once we have left it to rest and the soybeans have absorbed almost all the broth, put a pan on the Heat with 3 tablespoons of oil and when it is hot, pour the contents of the bowl and sauté until there is no broth left and the soybeans acquire a toasted color.
