tahini or tahina is a paste or sauce made from sesame or sesame that is often used in Middle Eastern cuisine, in dishes such as hummus or the baba ganoush (we have yet to share the recipe with you, it’s to die for ).

The original recipe uses toasted sesame, although sometimes we have prepared it with raw sesame and the result is also spectacular. You can buy the sesame already toasted or toast raw sesame, which is what we usually do.

  • 1 taza de sésamo tostado (90 gramos)
  • 1/4 de taza de aceite de oliva virgen extra (63 mililitros)
  • 1/8 de cucharadita de sal

  1. In a blender or food processor add sesame, oil and salt. Beat until the tahini emulsifies and forms a paste.
  2. Store in the fridge in a glass jar or jar.
