Tacos with double tortilla

Ingredients

  • 2 tomatoes
  • 1 large zucchini
  • 1 onion
  • 2 cups beans
  • 1 pineapple
  • Optional ‘fresh’ cheese < / li>
  • Cilantro

Preparation

Cut the tomato and courgette into squares. put in a bowl cut the onion very small add to the previous mixture. if you want to put pineapple, cut and add to the mixture. add the beans, cilantro, oil, salt and pepper. the longer it rests, the richer it is.

Heat the tortillas in a frying pan over low heat. (I leave them in the oven at 60º so they can withstand the heat)
