Ingredients

  • 2 cups whole wheat couscous.
  • 4 chopped ripe tomatoes .
  • 1 chopped onion.
  • 1 cup finely chopped parsley.
  • Lemon juice
  • Two tablespoons of virgin olive oil
  • Salt to taste

Preparation

Put 2 cups of water in a pot.

When the water boils, throw the cous cous and turn off the heat.

Cover until the cous cous grains have absorbed the water. then separate the grains with a spoon as long as they are loose, set aside and let cool.

In a salad bowl, mix the tomato, onion and parsley. add the cold cous cous and dress with lemon, salt and oil.
