Sweet potato


  • 1 medium sweet potato
  • 1/2 purple onion
  • Lettuce or spinach leaves
  • Oil and salt


In a frying pan, heat a little oil and add the onion, cut into strips, and the sweet potatoes, peeled and cut into pieces. Saute, stirring occasionally, about 10 minutes or until tender.

Add the apples and pear, also diced, and cook for a further 3 minutes, stirring every few minutes, being very careful not to break them.

Place the leaves, well cleaned and drained, in a bowl, and top with the fruit mixture.

Serve dressed with your favorite vinaigrette.
