Sweets and chocolate have a very bad reputation, but they do not have to make us fat and we can include them in a healthy diet as long as we make healthy recipes. As you may already know, we eat a high-carbohydrate, low-fat diet, but that doesn’t mean we can’t enjoy our favorite dishes, we simply look for low-fat alternatives or ones made with healthy fats.

This is the third chocolate mousse that we share with you, the first was made with avocado and the second with banana and avocado.  The base of today’s is sweet potato and it has an incredible texture, it has nothing to envy a non-vegan chocolate mousse! In addition, it has no cholesterol, it is low in fat (if you use a low-fat vegetable milk like the one from oatmeal or rice) and it is much healthier.

  1. Peel and dice the sweet potato and cook to steam for about 25 minutes or until tender. Let cool.
  2. Put the sweet potato together with the rest of the ingredients in a blender and beat until well combined.
  3. You can serve the mousse immediately, but we prefer to leave it in the fridge for at least an hour.
  4. We decorate the mousse with chopped pistachios and cocoa nibs .
