Sweet potato and bell pepper soup


  • 1 small chopped onion
  • 1 clove chopped garlic
  • 1 red pepper cut into pieces the size of a bite
  • 1 peeled and chopped sweet potato the size of a bite
  • 1 cup tomato juice
  • 2 cups vegetable broth
  • Salt and pepper
  • Juice lemon
  • Chili powder
  • Tabasco to taste
  • Fresh basil
  • < / ul>


    Sauté the onion, garlic, pepper and sweet potato in oil for about 10 minutes.

    Add the tomato juice and vegetable broth and puree with the mixture.

    Cook the soup over low heat.

    Season with salt, pepper, chili powder, lemon juice and Tabasco.

    Let the soup cook soup over low heat for 15 minutes.

    Garnish with the basil leaves cut into very thin strips.
