Summer salad

Ingredients

  • 350 g spelled
  • 500 g chickpea and herb hummus
  • 350 g of tomatoes cherry < / li>
  • 150 g olives
  • 1 cucumber
  • 1 bunch of fresh basil
  • 1 teaspoon crushed mint
  • Salt and pepper

Preparation

First rinse the spelled well under running water, then pour it into a pot of water (twice its volume), bring to the boil, lightly salt and cook for 20 minutes over low heat with a lid , until all the water has been absorbed. Once cooked, turn off the heat and let it cool.

Wash the cucumber well, cut it into half rounds and then cut them in half. Wash the tomatoes and cut them in half. Pour the spelled into a bowl and season with cucumber, tomatoes, olives, chopped basil, mint, salt, pepper and oil.

Serve by placing the hummus on one side of the plate, and the salad on the other half spelled.
