A light and fruity vegan bread with a light fruit flavor, perfect for breakfast
In a large bowl, add 2 tablespoons of warm water, 1 teaspoon of sugar, and the yeast. Mix and leave to foam (10 minutes).
In a blender, puree the strawberries with the water, puree the sugar, salt and oil . Add the yoghurt/nut milk to the puree and stir.
Add 1.5 cups wheat flour and 1 cup yeast bread flour mix, then add the strawberry puree add the flour.
Take a large spoon or spatula and mix everything together for a minute or two, scraping down the sides and while of mixing until well blended and distributed. Add spices like cinnamon if desired.
If the dough is very sticky, then add some flour to the bread until the Dough is slightly sticky and soft. (Bread flour needed depends on ripeness/humidity of strawberries).
Cover with a towel and cook for 1.5 hours or until doubled leave it as is.
Use the spoon to mix the dough again and form a ball.
Sprinkle a few tablespoons of bread flour over the dough. Oil your hands and move the dough so that it’s mostly covered in flour (you can toss the dough on the counter a few times at this point to develop more gluten :).
Pull something from all sides and insert below. Place seam-side down on a parchment-lined or well-greased loaf tin.
Spray water liberally on top and then sprinkle some Flour or oatmeal on top.
Cover with a towel and let rise for 45 minutes or up to double.
