Strawberry gazpacho

Ingredients

  • 500 gr strawberries
  • 700 gr tomatoes
  • 1 small red pepper
  • 1 small green pepper
  • 1 large onion
  • 1 or 2 cloves garlic
  • Oil and vinegar
  • Salt and parsley

Preparation

Wash the strawberries, remove the stems and put them in a large bowl.

Wash the tomatoes and cut them into large pieces on top (on top of the bowl, so as not to lose juice!.

Wash and clean the inside of the peppers (remove the seeds) and cut them into pieces and put them in the same bowl.

Peel the onion and garlic and put them in that same bowl, mix it with a spoon and beat it with the mixer (cover the bowl with a cloth or lid so it doesn’t all fly out!).

Now add 8 tablespoons of oil, 4 tablespoons of vinegar , 1 tablespoon of parsley and 1 teaspoon of salt.Beat everything again with the blender.

Let it cool for a while in the fridge and enjoy it!!!.

You can also add small pieces of bread and beat it all together or add them crouton-style at the end).
